Irish food/drink culture is trendy in chi-chi dining establishments at the moment, thanks to places like Café Cecilia. It's also in the public consciousness more because of e.g. Shit London Guinness, plus Guinness marketing is as effective as ever (e.g. myths of 2-part pour and "the perfect pint")
