We’re winding down. This our last event of this month before we head to Louisiana for Thanksgiving then we wrap up our last four dates of the year before we pivot to making king cakes starting January 5th.

Mais la. That's an etouffee. That's not a jambalaya at all. Putting a hot, fried softshell crab on coleslaw just doesn't sound appetizing as the mayo in the coleslaw warms up from the fried seafood. And cheese with a seafood poboy? Jesus wept.

Two breweries took a chance on us when we were just getting started - Friction Beer Company in Shawnee and Discourse Brewing in Overland Park. We wouldn't have been able to make strides nearly as big as we have had without them. As our 2025 winds down I want to thank them bigly.

Haven’t made jambalaya in a minute. Let’s remedy that, comme ça. Never understood people that put paper towel down to put their browned meat on top of. That just soaks up that good juice from the meat.

Chicken fricassée! Looks better in person than in pictures. I’ll take a pic of the plate tonight when we start serving. All I can say when cooking is use your herbs. Layer that flavor. Get that complexity that’ll raise eyebrows and make mouths water.

Totally spaced on having an event tomorrow night as well as Saturday. Oh well, we will still make our debut in style. The brewery we're at tomorrow names their beers after local birds so I had to put a pelican on the flyer to represent us being from Louisiana.
