I had an idea and wanted to make
a riff on the Croque Madame with toast rounds, chicken sausage, sharp cheddar and a lemony Bechamel. Topped with scrambled egg whites and a preserved egg yolk.
Turned out awesome! Adding to my breakfast rotation.
