It's a really great replacement for the tomatoes personally. The feta brings a lot of tang to help kinda cut though the cheddar sauce more, and the pumpkin adds a really nice texture and flavor.

I'd roast the pumpkin before adding it in. Slice it, bake 30 minutes at 350 with some oil and salt
