I finally got some burlap from a friend's coffee roasting business and quarter sawn white oak from a tree we took down a year ago sufficiently air dried that I'm gonna make bagel boards for him today.

Escabeche this morning. Great way to use veg and peppers that haven't found a home in another dish. Carrot, onion, jalapeño, green tomatoes, toasted garlic cloves.

About 5lbs. This will get slowly heated again and put into corn tortillas dredged in the reserved fat and crisped on the flat top grill. We'll do a little "al pastor" touch with fresh pineapple salsa, cilantro, white onion, Oaxaca cheese, and a coleslaw side.
