RISE OF THE TRIADS had some great ones. There was Ludicrous Gibs (pictured) where an eyeball with trailing optic nerve flies past the camera. Also there was a weapon called a flamewall, and any enemies hit by the wall were incinerated into ash, which stood there for a moment before collapsing.
