I'm not going to lie, it wasn't the best meal I've ever had, and the fact that there was a crescendo of snap, crackle, & pop was quite disconcerting.

But also, I've cooked far, FAR, worse things in my time. I probably wouldn't serve with rice again, but in a pinch?

The other ingredients in the sauce were fairly straightforward. Stock, onions, tomatoes, apples, sultanas, sugar, vinegar.

Perfectly reasonable curry ingredients, right?

Fry the veg, add everything else and simmer for 20 minutes, then thicken with a wheat flour slurry at the end.

Yum.

Now for true verisimilitude, I didn't really want to use a modern curry powder, so I found a recipe, also from the 1930s and made it from scratch. It was 48% turmeric by volume, and also included coriander, ground ginger, black pepper, cayenne, cardamom, caraway, and ground cloves.

I tweaked the recipe very slightly, as a vegetarian I wasn't too enthused by step 1, which was "Fry the curry powder in beef dripping". I used TREX (highly hydrogenated vegetable oil) instead, and replaced the "2lbs of pre cooked meat" with baked tofu. In deference to the era, I did not marinate it.

I stumbled across this book at work a few months ago, and after being initially quite dismissive of it, morbid curiosity won out. I found a copy online, and obviously decidedly I had to try it.

Continuing on a theme, I couldn't figure out these ones, because while it'd be fair today, it felt too early to be leaning into the "People Hate our Product" idea.

But they're from 1941, so it's referencing rationing and saying that you need to control yourself and take less than you want.
