Can we get twice-daily Sunset Limited, Crescent, and City of New Orleans trains to capitalize on the network effects?

Amtrak is trying to add more rail cars to its new Mardi Gras rail service because ridership is already at double projections just a few weeks in. Maybe people in this country actually want to ride trains when they are given the option to?

If you're avoiding meat and animal products out of concern for both animal welfare and the environment, would it make sense to allow wild-harvested invasive species?
Idk if it works out practically but a nutria-and-snakehead gumbo might be okay.
