First attempt!! Sourdough Apple Fritters! I think they turned out pretty good, considering i don't have a thermometer to control the temp.

Last week was a whirlwind. I took a week of holidays to throw a 50th anniversary party with my brothers for my parents. It was a super busy week of baking and food prep. Decorating, speeches, washing dishes, cleaning. There was VERY little time to relax.

I realize just how lucky I am to wake up, and enjoy a good book and a better cup of coffee with my favourite pup.

Tomorrow this kiddo graduates from high school. I am struggling to accept the fact that he is an adult. That he has overcome every obstacle to get here. I am so beyond proud of this man.

I made #sourdough hamburger buns!!
Next time I will do it a bit differently. I would make more buns from the same amount of dough. And I would start then out a bit flatter. But they were delicious!!!

What does 36lbs look like on my 5'5" frame?
While I am losing weight, my goal is to prevent the health problems i see in my parents with T2 Diabetes, joint problems, and others.
I have a ways to go, but I am so proud of how far I have come.

My son's grad gala (senior prom) Was last night. He celebrated his upcoming graduation with friends.
Today we took the kids bowling and for lunch, knowing that our trips like these may be numbered.
I am so proud of how hard he has fought to be able to get here. Autism is still so misunderstood.

How does this happen? I blinked and he went from a baby in my arms to attending his senior prom, and preparing to graduate from high school.
And with his best friend on his arm, he was happier than I have seen him in a long time.

My manager booked off today, but came in anyways to surprise me with daffodils, a sugar-free oat milk Latte and a gift certificate ate to our favourite coffee shop to celebrate Administrative Professionals Day.
