My 40 hours come from four 10-hour shifts (9p-7a, Friday-Monday). Tuesday mornings I've been making a habit of either taking my sweetheart or just myself to a nice breakfast. I'm really enjoying that. Today I went to a diner I've been going to my whole life, and now I'm winding down.

I love making a bigass batch of chili. I like mine spicy & thick, and my recipe incorporates beans. This is what it looks like at the end of the prep phase.
This has a few hours to simmer so that all the ingredients marry up until the onions & peppers soften and eventually nearly dissolve.
