Food markets we've visited recently feature Handiya, the fermented rice drink. The fermentation starter/accelerator is Bakhar (picture) - a rice+herb mixture dried until it resembles whitish pebbles. Handiya has less than 2% alcohol content, but puts everyone is a mellow mood!

INFUSION project and @brlps_jeevika are piloting the innovative concept of healthy rural food markets, 'Didi Haat'. Last week we were in Telhara in Nalanda, Bihar, planning the first haat with our design partners Design Jatra.
