Loft and Bird both usually have a lot of events going on so maybe check that out, then there's the Golden Circle which is a classic for a reason.
If you're interested in viking stuff then Eirikstaðir is a cool museum out in the countryside.

Well in the Reykjavík area there's Nexus if you wanna see what the local ttrpg/geek scene is like, you could also see if there's anything cool showing in Bíó Paradís, the local arthouse cinema.
Whale watching is a bit touristy but seeing a whale up close is a genuinely magical experience.
