It's only me that's gone vegetarian, but given that it's mainly me that cooks it means three veggies for the price of one 😉

Had to serve up and eat while hot. Butternut squash, cooked in the oven down low for hours, homemade garlicky tomato sauce, thickened with stale breadcrumbs that were also used to make the homemade panko on top. Yum.

The recipe is dead easy. Chop up an onion and then add the beans, one can at a time, after the onions have softened (10m). Cook it all to evaporate the water a bit and for it to thicken
