other r&d: Soba w grated daikon, seared maitake, and beef (hot pot cuts). The sauce is porcini water (leftover from yesterday's porcini pasta) + tsuyu (soba soup base) + some rendered beef fat lol 👩🍳 it's giving deconstructed beef stew vibes
