Made this beauty for lunch today. Toasted sourdough bread, tomato, basil, pepper bacon, turkey pastrami, honey ham, a light spread of Dijon on one side and Wegmans triple cream brie on the other. I toasted the bread in some residual bacon fat and Kerrygold. It was wonderful. #sandwichsky

Shout-out to the replies! I really wanted some crispy skin, so I deboned, flattened, and seasoned the thighs and then pan seared them. Then I made mashed potatoes and baby broccoli. Once the thighs were done I made a pan sauce with butter, garlic, heavy cream, and cooking sherry*

Everything is going to hell but I made a really good shrimp fried rice tonight
