Several hours later, this vegan beef stew is finished and it tastes absolutely amazing. Growing up, my auntie made the best soups and stews. When I took that first bite last night, I got emotional because the flavor brought me right back to her kitchen.

Amazing but very simple lunch today. A vegan steak roll on a homemade buttered hoagie with peppers and onions, with some coleslaw that reminded me of my aunt’s. Funny how food can bring so much joy and comfort, especially after a long day of work.
