My final university assignment has been submitted, now the wait for my results begins. It's been a long journey, but, at the grand age of 40, I will finally have achieved my BA(Hons) in History.

The most common question I'm asked about my recipes is why I always measure in grams and will not use cups. The simple reason is that measuring by weight is much more precise, allowing me to calculate an accurate carbohydrate count for my recipes. Vital for a T1 Diabetic.

Today is obviously a day for making biscuits.

I figure We're still at the 'getting to know each other' stage, so I'll take this opportunity to introduce you to my fur family. These are the Border Collies Loki (black and white), and Kyrie (brown and white), and the cats, Diego (the skinny one), and Smaug (the large, ginger one).

My daughter insists I bake this cake for her birthday every year. It's a tres leches cake, with a creme diplomate and fresh strawberry filling, topped with Chantilly Cream, more strawberries, chocolate strands, and salted caramel.

This is probably my favourite thing I've baked in the last 5 years. It was my birthday cake last year, a caraway seedcake, filled with raspberry jam, decorated to look like Bilbo Baggins' home at Bag End.

I think we all know what you're really here for... this is Smaug, the tiny, fluffy, ginger dragon.

Every year my husband, who I shall refer to as Mr Cakes, challenges me to bake a weekly Bake-Off snack to fit with whatever the weekly theme of the show is. For pastry week this year, it was sausage rolls with bacon and bourbon relish.

I guess it's time to unleash those cakes we like on BlueSky. Let's start with some Baileys whipped cream filled profiteroles and see how it goes from there.
