Today it was TJ’s Mandarin Chicken with some leftover edamame and Minute Rice (it was open while my bag of rice was not).
Trying to eat out of our pantry and freezer as often as we can until the end of the year.

From the freezer: chicken thighs and peppers and onions.

From the pantry: canned tomatoes and tomato paste.

Chicken cacciatore for dinner tonight. 😋

Every year one of my sisters insists on making green bean casserole and cheesy mashed potatoes. No one wants them. No one particularly likes them. We’ve all begged her to please bring anything else. She will not relent. We have all resigned ourselves to our fate.

I could not agree more. One of the reasons I love Thanksgiving is because our food is great. We’ve long abandoned green bean casserole and the like. It’s all about fresh ingredients, butter and seasoning. Please don’t be afraid to season your dishes.
Every year many people express their hatred for Thanksgiving food, and I’m telling you, the solution is to simply make food that tastes good.
