As I gain more patience the older I get, I find that I can tolerate the science of food a lot more than when I was a young chef, just starting out. Making (pear) vinegar is a cool process because first you have to make wine, then you kill the yeast to make vinegar. 6 weeks later...

In 7th grade I took a Home Ec class. In 9th grade I took Baking I class and In 10th grade, Baking II. Unfortunately, my teacher quit half-way thru and my new baking teacher made me take the class over. At J&W I enjoyed the baking and pastry classes but not enough to pursue that side.

When I was in culinary school in RI, I often visited this tiny little ice cream shop in Warwick. They made a cinnamon ice cream that stayed in my memory for years. We finally convinced him to share the secret. It was Red Hots - the candy. Here's my version. 🔟/🔟

In my 30+ wars as a professional chef I didn't like to bake. Too much discipline. As I age, I find that my patience for the science is increasing. I recently developed this Pullman sourdough sandwich loaf and now it's my daily bread. 🙏
